To Prepare Sambar

Mustard Seeds | 1 teaspoon |
Aniseeds | 1/2 teaspoon |
Asafoetida | a pinch |
Curry leaves | 5 leaves |
Coriander leaves | a handful - finely chopped |
Tamarind | 10 gms |
Rock Salt | 3 tablespoon |
Onion | 1
no - medium size - Cut vertically |
Tomato | 1
no - medium size - Cut vertically |
Cooking Oil | 4
tablespoonful (preferably Refined Oil) |

Sambar Onion | 20 nos |
Brinjal | 250 gms |
Drum Stick and Brinjal | 250 gms |
White pumpkin | 250 gms |
Lady's Finger | 250 gms |
Method |
Soak tamarind and rock salt in 100 ml of water for about 1/2 hour. Crush and extract the juice.Add a pinch of turmeric powder to the Lenthils in about 500 ml of water and cook it over a pressure cooker.
Heat oil over a pan, add mustard seeds allow to spatter, add aniseeds and asafoetida. Add Onion, Tomato and any one of the above listed vegetables and fry it.Smash the cooked lenthils and add Chilli powder to it.
Transfer it to the above fried vegetable mixture and bring it to a boil. As soon as, the vegetable is cooked, add tamarind juice to it.Allow it to boil for about 5-10 minutes. Keep stirring the contents, so that it doesn't get stick to the pan.
