Vegetable Kootu

To Prepare Vegetable Kootu

Ingredients
Kadalai Parippu(Besan Seeds) 150 gms
Turmeric powder a pinch
Green Chillies 6-8 Nos cut vertically
Ginger 1/2 cm smashed
Garlic 1-2 cloves-finely chopped
Coconut a handful-grated (Optional)
Mustard Seeds 1 teaspoon
Aniseeds 1/2 teaspoon
Coriander Leaves One handful (finely chopped)
Curry leaves 5-6 leaves
Powdered Salt 1 1/2 teaspoonful
Cooking Oil 2 tablespoonful
Vegetable  
Onion 1 No - vertically cut
or Sambar Onion 8-10 Nos
Tomato 1 No - large size vertically cut
White Pumpkin 250 gms
or Snake guard 250 gms
or Cabbage 250 gms
or Cauliflower 250 gms
or Greens 250 gms finely chopped
Method

Add a pinch of turmeric powder to Kadalai Parippu. Add twice the quanity of water and cook it (preferably over a pressure cooker).

Heat oil over a shallow pan, add mustard seeds to spatter,add aniseeds,curry leaves. Add Onion,tomato,green chillies,ginger and garlic and fry it with any one of the above vegetable and cook it.

Once the vegetable is cooked,smash the cooked Kadalai Parippu and add to the above over a slow flame.

Note The resultant recipe should be neither too watery nor solid,It should be gravy. The quantity of Kadalai Parippu, vegetable and water should be proportionate.
